Salmon fillets with home made sun-dried tomato and walnut pesto

Ingredients
- 4 salmon fillets
- 3 lemons, sliced
- ½ glass white wine
For the pesto
- 100g sun-dried tomatoes
- 100g walnuts, slightly toasted
- 2 cloves garlic, chopped
- 3 tbsp grated Parmesan
- 1 handful basil leaves
- 2 tbsp chopped parsley
- 50ml olive oil
- fresh black pepper
Method
Rinse the sun-dried tomatoes under some water to remove any excess salt as they tend to be very salty. You can now start making the pesto by placing all the ingredients into a food processor. Add enough olive oil to blend to a nice rustic pesto. Leave this pesto chunky for best results. Next, place the 4 salmon fillets in a baking dish. Spread each piece with a tablespoon of the pesto, and cover the pesto with 4 or 5 slices of lemon. Drizzle with olive oil, season well with fresh black pepper and pour the white wine over the salmon. Bake in the oven for 10-15 minutes at 180`c. When ready, serve the salmon fillets with new potatoes and a nice rucolla salad.

Għall-pesto
- 100g tadam imqadded
- 100g ġewż, inkaljat ftit
- 2 sinniet tewm, imqattgħin
- 3 mgħaref ġobon parmeġġan, maħkuk
- 1 ponn weraq tal-ħabaq
- 2 mgħaref tursin, imqatta
- 50ml żejt taż-żebbuġa
- bżar iswed frisk
Għandek bżonn ukoll
- 4 fletti tas-salamun
- 3 lumijiet imqattgħa
- ½ tazza nbid abjad
Method
Laħlaħ it-tadam imqadded fi ftit ilma biex tneħħi l-melħ żejjed għax ġeneralment dawn ikunu melħin ħafna. Ibda agħmel il-pesto billi tpoġġi l-ingredjenti kollha f’food processor. Żid biżżejjed żejt biex ikollok pesto tajjeb. Għall-aħjar riżultat il-pesto jrid ikun fih il-biċċiet tat-tadam u l-ġewż jintiegħmu. Imbagħad poġġi 4 fletti tas-salamun f’dixx. Ferrex mgħarfa pesto fuq kull biċċa u wara poġġi 4 sa 5 biċċiet lumi fuq il-pesto. Itfa’ ż-żejt taż-żebbuġa, ħawwar sew bil-bżar u itfa’ l-inbid abjad fuq is-salamun. Sajjar fil-forn f’temperatura ta’ 180oC għal bejn 10 minuti u 15-il minuta. Meta jkun lest, servi s-salamun mal-patata l-ġdida u l-insalata tal-aruka.
