Salmon fillets in curried coconut cream
Serves: 2
Ingredients
- 2 x 200g salmon fillets
- 1/2 leek
- 3 cloves garlic
- 1/2 cup fish stock
- 1 tbsp mild curry powder
- 1/2 tsp red curry paste
- 1/2 cup coconut milk
- 50g butter
You will also need
- Bunch spinach leaves
- 2 medium sized potatoes
- 1/2 mango
- 1 tsp fresh rosemary
Method
Saute the salmon from both sides and finish under the grill? Using the same pan On low heat sauté the chopped leek, garlic and curry powder until veg is softened. Mix in curry paste and than pour in the stock simmer and reduce by half, pour in milk and continue simmering until a sauce consistency. Cut the potatoes in cubes and blanch, mix with the rosemary, dice the mango and mix well together with little oil, place on an oven tray and grill until browned. Sauté the spinach in garlic oil and season
