Roasted pears with fig jam, mozzarella and crispy prosciutto

Ingredients
- 3 pears
- 1 tbsp runny honey
- 1 packet sliced prosciutto
- 2 balls fresh mozzarella di buffalo, sliced (Galbani)
- 2 tbsp fig and pear jam (Mackays)
- Salad leaves to decorate

Method
Start by halving the pears, hull to remove the seeds and place onto a baking tray. Drizzle with honey and season with a little salt and pepper. Place into the oven roast for 5-10 minutes. At the same time, place the prosciutto slices onto a baking tray, drizzle lightly with olive oil and grill for a few minutes till crispy. When the pears are cooked, spoon over a little fig and apple jam and lay over the sliced mozzarella. Top with the crispy prosciutto and place the bake in the oven for just 2 minutes. Serve while hot with a drizzle of olive oil and a few salad leaves.
