Risotto with sea-urchins

Serves:

Ingredients

  • 1 shallot, finely chopped
  • 100g arborio or carnaroli rice
  • 50ml white wine
  • 50g fresh sea-urchin meat
  • Chopped chives
  • 250ml fish stock
  • 5g butter plus extra 10g frozen butter
  • 2 tbsp extra virgin olive oil

Method

In a hot frying pan, fry the shallot in 5g butter to soften. Add the rice and stir until it becomes transparent. Add the wine and let it reduce before adding in the warm fish stock, bit by bit. Cook for at least 20 minutes. When the rice is cooked, remove from the heat, add the frozen butter, olive oil, sea-urchins and chives and mix well. Do not cook the sea-urchins. Serve immediately.
