Ricotta and pear cake

Ingredients

3 eggs
130g caster sugar (Lamb Brand)
250g ricotta (Benna)
1 tsp vanilla extract
Zest 1 lemon, juice ½
185g plain flour (Lamb Brand)
50g pure ground almonds (Lamb Brand)
1 ½ tsp baking powder (Lamb Brand)
Pinch salt
2 pears, peeled and quartered

Method

Heat the oven to 180`c and line the sides and base of a 20cm tin with baking paper. Place the eggs and sugar in a bowl and whisk for 5 minutes till light and fluffy. Add in the ricotta, vanilla, lemon juice and zest and mix together well. Add in the flour, almonds, baking powder and salt and fold in. Pour the mixture into the prepared tin, flatten out and arrange the pear quarters on top. Place into the oven and bake for 40-45 minutes or until cooked through.
