Satay vegetable noodle salad

Ingredients

For the peanut dressing
2 tbsp peanut butter (Sunita)
2 tbsp dark soy sauce
3 tbsp warm water
2 tbsp sriracha sauce
2 tbsp lemon juice
Salt and pepper
1 tsp minced garlic paste

You will also need
200g cooked thick noodles
100g roasted salted peanuts, roughly chopped
2 spring onions, chopped
1 large carrot, peeled and cut into long matchsticks
1 small cucumber, deseeded and cut into long matchsticks
150g finely shredded red cabbage
2 chicken breasts

Method

For this recipe start by making the peanut dressing. Place all the ingredients together in a bowl and whisk together to make this delicious peanut sauce. Put aside. Next, season the 2 chicken breasts with a little soy sauce and garlic paste and pan fry on both sides till cooked through. To make the salad, toss together the cooked noodles, peanuts, spring onion, carrot, cucumber and cabbage with the prepared peanut sauce. Serve into bowls with the cooked sliced chicken and extra chopped peanuts and sesame seeds on top.
