Red velvet cupcakes

Ingredients

  • 180g margerine (Stork)
  • 2 large eggs
  • 1 tsp vanilla essence
  • 1 teaspoon salt
  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 small bottle red food coloring
  • 1 tbsp cocoa
  • 1 cup buttermilk or natural yoghurt
  • 3 teaspoon baking powder

 

Method

Preheat oven to 180°C. Line a cupcake tin with paper cupcake casings. Cream the margerine and sugar until light and fluffy. Add eggs and beat for 1 minute. Beat in vanilla until blended. Combine cocoa and food colouring, beat into the egg creamed mixture. Combine flour and salt. Alternate adding flour and buttermilk / yoghurt mixtures to the batter, beating on low to medium speed. Add the baking powder to cake batter. Spoon the batter into the lined cupcake tin. Bake for about 20-25mins. Cool on cake racks. Remove from pans and frost.
