Pumpkin and walnut cake

Ingredients

  • 2 eggs
  • 125ml vegetable oil
  • 250g pumpkin puree
  • 80ml water
  • 280g caster sugar
  • 190g plain flour
  • ¼ tsp salt
  • ½ tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 125g chopped walnuts

Method

Preheat the oven to 175`c and grease and flour a loaf pan. In a medium bowl, mix together the eggs, oil, pumpkin and water. Sift in the dry ingredients and mix till just combined. Stir in the walnuts, then pour the mixture our in to the prepared loaf tin. Bake for one hour or until a tester inserted near the center comes out clean

  • 125g ġewż mqatta’
