Poached pears in puff pastry with chocolate sauce

Serves: 4

Ingredients

  • For the pears

  • 4 large or 8 small pears, peeled but with stems on
  • 1 stick cinnamon
  • Few cloves
  • Zest of a lemon
  • 3 tbsp sugar
  • Water
You will also need
  • Puff pastry
  • 100g dark chocolate
  • 100ml double cream
  • 1 tbsp caster sugar
  • Icing sugar to decorate
 

Method

To make the poached pears, heat all of the pear ingredients in a small saucepan and pop in the peeled pears. Cook for 15 minutes or until the pears are cooked through. Allow to cool and remove from the syrup. Next, roll out the puff pastry and cut into strips. Wet the strips with a little water and use to wrap around the pears, starting from the top and tucking in the end piece at the bottom of the pear. Lightly wet the puff pastry again and sprinkle the caster sugar over the pears. Place onto a baking tray lined with non-stick paper and bake in the oven for 25 minutes. Meanwhile, to make the chocolate sauce, heat together the dark chocolate and the cream melt the chocolate and remove off the heat stirring constantly. To serve, dust the pears with icing sugar and pour over the chocolate sauce.
