Piped cheesy potato chicken pie with roasted peppers

Ingredients
- 1 x chicken pie (Maypole)
- 500g boiled potatoes
- 3 tbsp grated parmesan cheese (Zanetti)
- 1 tbsp butter (Valio)
- 100ml single cream (Elmlea)
- 1 tbsp finely chopped parsley
- Salt and pepper to taste
- 1 red, 1 yellow, 1 green pepper
- 4 cloves garlic, skin on
- 1 tbsp olive oil
- 2 sprigs fresh rosemary

Method
Start by defrosting the meat pie and cut off the pastry top to reveal the filling. Make a mash potato by mashing together the potatoes, butter, cream, parsley and 2 tbsp cheese and season well with salt and pepper. Pipe onto the pie, sprinkle over 1 tbsp grated parmesan and bake for 35 to 40 minutes at 200°C. Also, deseed and slice the peppers. Place onto a baking tray with the garlic, season with salt and pepper and drizzle with oil. Roast in the oven for 25-30 minutes and serve with the cheesy mash topped chicken pie.
