Peanut butter bars

Ingredients

For the base
100g oats, blitzed fine (Lamb brand)
100g ground almonds (Lamb brand)
5 tbsp crunchy peanut butter (Lamb brand)
3 tbsp honey or maple syrup
1 tsp vanilla extract
1-2 tbsp milk (Benna)

For the topping
100g salted roasted peanuts (Lamb brand)
150g milk chocolate, melted (Lamb brand)
1 tbsp melted butter (Benna)
Good pinch coarse salt to decorate

Method

For the base, just mix everything together and press into a 20cm square lined cake tin. Place into the freezer to firm up for 15 minutes. When ready, mix together the melted chocolate, butter and roasted salted peanuts and spread over the base. Sprinkle with salt and allow the chocolate to firm up before cutting into fingers.
