Pasta with grilled aubergines

Ingredients

  • 500g pasta
  • 2 ripe auberigine
  • 200ml vegetable stock
  • 50ml white wine
  • 1 tbsp garlic
  • 1 tbsp oregano
  • 1 tbsp coriander
  • 250ml polpa
  • Grated Maltese gbejna
  • Salt and pepper

 

Method

Boil pasta accordingly to instructions and set aside. Slice the auberigine and grill on high heat, chop and put in a pan together with the garlic, coriander and oregano. Add the white wine and vegetable stock and simmer, add the polpa and simmer once again. Season the pasta sauce, add the pasta, toss and serve with the grated gbejna.
