Parma-ham and grilled aubergine salad with chilled melon soup

Ingredients

For the melon soup

  • ½ melon
  • 100ml fresh cream (Benna)
  • 3 tsp demerara sugar
  • ½ shot Grenadine

For the salad

  • 6 slices aubergine.
  • 2 large tomatoes
  • Handful mixed salad leaves
  • 6 slices Parma ham

 

Method

To make the soup, clean the melon and cut into small pieces, put in a blender together with all the other ingredients and chill for 30 minutes before serving. Meanwhile, grill the aubergines and slice the tomatoes, using a mould place a slice of Parma ham at the bottom than mixed lettuce followed with aubergines and tomatoes for 3 times. Finish with Parma ham on top and serve with the soup.
