Mozzarella and Parma ham salad with spicy gremolata
Serves: 2
Ingredients
- 2 balls buffalo mozzarella
- 6 slices Parma ham
- 1 red chilli, deseeded and finely chopped
- 6 black Kalamata olives, finely chopped
- Zest of a lemon
- 1 clove garlic, finely chopped
- Good pinch coarse sea salt
- 3 tablespoons extra virgin olive oil (Filipo Berrio)
- 2 tbsp fresh parsley, finely chopped
- Rocket leaves and chopped tomatoes to garnish
Method
Slice the mozzarella and arrange on a plate. Scrunch up the Parma ham and place amongst the mozzarella slices. In a bowl mix the chopped chilli with the chopped olives, lemon zest and crushed garlic. Add in the salt, oil and parsley and stir together to make the gremolata. Spoon the gremolata over the sliced mozzarella and Parma ham and dress with chopped tomatoes and a few rocket leaves
