Minced beef pie with honey potato slices

Ingredients

  • 600g lean minced beef
  • 1 tbsp olive oil (PREGO)
  • 3 cloves garlic, chopped
  • 3 spring onions, sliced diagonally
  • 1 large red pepper, chopped
  • 100g baby sweetcorn, sliced
  • 1 packet oxtail and vegetable soup (KNORR)
  • 500ml water
  • 2 large potatoes, peeled and thinly sliced
  • 2 tbsp honey
  • Fresh seasoning

Method

Start this recipe by heating the olive oil in a large pan. Add in the sping onions and garlic and soften for 2 minutes. Add the chopped red pepper and sliced sweetcorn and continue to cook for 2minutes more. Add in the minced beef and brown all over. Add in the water and oxtail and vegetable soup mix and stir constantly till the mixture thickens. Remove the pan off the heat and transfer the beef mixture into an oven-proof baking dish. Even out completely using the back of a spoon and place the sliced ptatoes on top, overlapping each other till the top is completely covered. Drizzle the honey over the sliced potatoes and season well with salt and pepper. Bake in the oven at 180`c for 30 minutes, or untill the potatoes are cooked and golden brown. Serve whilst still hot.   • mgħarfa żejt taż-żebbuġa (PREGO)
  • 3 sinniet tewm, imqattgħin
  • 3 spring onions, imqattgħin la ġenba
  • bżaru aħmar kbir, imqatta’
  • 100g qamħirrun żgħir, imqatta’
  • pakkett soppa ‘oxtail and vegetable’ (KNORR)
  • 500ml ilma; 2 patatiet kbar, imqaxxrin u mqattgħin irqiq
  • 2 mgħaref għasel
  • ħwawar friski

Method

Ibda r-riċetta billi ssaħħan iż-żejt f’taġen kbir. Żid l-ispring onions u t-tewm u sajjarhom għal 2 minuti. Imbagħad żid il-bżaru aħmar imqatta’ u l-qamħirrun u kompli sajjar għal 2 minuti oħra. Żid l-ikkapuljat u sajru sakemm jiħmar. Żid ukoll l-ilma u t-taħlita tas-soppa tal-pakkett u ħawwad kontinwament sakemm it-taħlita tagħqad. Neħħi t-taġen minn fuq in-nar u itfa’ t-taħlita tal-ikkapuljat f’dixx tal-forn. Iċċattjaha b’mgħarfa u poġġi l-biċċiet tal-patata fil-wiċċ. Rikkibhom fuq xulxin ħalli l-wiċċ jinkesa kollu. Ferrex l-għasel fuq il-patata u ħawwar bil-bżar u l-melħ. Sajjar fil-forn, f’temperatura ta’ 180oC għal 30 minuta, jew sakemm il-patata tiħmar. Servi xħin ikun għadu sħun.
