Marinated salmon with beetroot
Serves:
Ingredients
- 200g salmon, diced
- 50ml beetroot juice
- 1 capsicum
- lemon juice
- Olive oil
- Salt pepper
- 10ml white wine vinegar
- Cos lettuce
Method
Start by marinate the diced salmon with the lemon juice, olive oil, vinegar and the beetroot juice. Allow to infuse and marinate for 20 minutes. Meanwhile, grill the capsicum for 2 minutes on each side and serve with the marinated salmon and cos lettuce.
