Lemon and Greek yogurt fool with berry compote

Ingredients

  • 200g lemon curd
  • 500g Greek yugurt
  • zest of a lemon
  • 200g frozen berries
  • 1 tbsp icing sugar
  • shortbread biscuits for serving

Method

Start this recipe by preparing the berry compote. Place the frozen berries in a bowl, sprinkle over the icing sugar and leave the fruits to defrost. Meanwhile, mix together the lemon curd and Greek yogurt in another bowl. It is important not to mix the lemon curd and yogurt completely so that you are left with streaks. Spoon half of this mixture into the serving glasses, and spoon half of the berry compote on top. Spoon on the remaining lemon Greek yogurt mixture, followed by a second layer of berry compote. Finish the dessert by decorating the top with some berries and fresh mint leaves. Serve the lemon and Greek yogurt fool chilled, with the shortbread biscuits on the side.

  • 200g frott irqiq iffriżat
  • mgħarfa zokkor tal-ġelu (icing sugar)
  • gallettini short bread biex isservi

Method

Lesti z-zalza tal-frott billi tpoġġi l-frott irqiq iffriżat fi skutella. Fuqu ferrex iz-zokkor tal-ġelu u ħallih jinħall. Sadattant, fi skutella oħra, ħallat il-krema tal-lumi u l-jogurt Grieg. Tħawwadhomx ħafna ħalli jibqagħlek ftit linji sofor. Uża nofs it-taħlita u itfa’ mgħarfa minnha fit-tazzi li tkun se sservi fihom. Itfa’ fuqha mgħarfa miz-zalza tal-frott. Erġa’ itfa’ saff ieħor mit-taħlita tal-jogurt u l-lumi u agħmel saff ieħor bil-frott. Żejjen id-deżerta bi ftit frott ieħor u bil-weraq tan-nagħniegħ. Serviha kiesħa bi ftit gallettini.
