Hot baked berry pudding with ice-cream

Ingredients
- 3 eggs (Coccodi)
- 200g caster sugar
- 1 tsp vanilla extract
- 120g butter, melted (Lakeland)
- Zest 1 lemon
- 200g plain flour
- 1 tsp baking powder
- 150g mixed frozen berries, defrosted (Asiago)
- 2 tbsp flaked almonds
- 1 tbsp icing sugar for dusting
- Ice-cream for serving (Carte D’or)
Method
Whisk together the eggs and sugar lightly before adding in the vanilla, lemon zest and melted butter. Next, fold in the flour and baking powder but DO NOT overmix. Spoon the mixture into a lined square baking dish and spoon over the berries and flaked almonds. Bake in the oven at 200`c for 35-40 minutes or until cooked through. Serve dusted icing sugar and with a scoop of ice-cream.
