Honey and orange chicken thighs with soy sauce

Serves: 4

Ingredients

  • 3 tbsp maple syrup
  • Juice of an orange
  • 2 tbsp soy sauce
  • 1 tbsp grated peeled fresh ginger
  • 1 tsp sesame oil
  • ¼ tsp chilli flakes
  • 2 garlic cloves, minced
  • 8 boneless chicken thighs, skinned
  • 2 sliced spring onions
  • you will also need couscous and orange segments for serving.

Method

Combine first 7 ingredients in a small bowl, stirring with a whisk. Place maple mixture in a large zip-top plastic bag. Add chicken thighs to bag; seal. Marinate in refrigerator 1 hour. Preheat oven to 200`c. Remove chicken from the bag, reserving marinade. Place marinade in a small saucepan over medium-high heat; bring to a boil. Cook until marinade reduces for about 5 minutes. Arrange chicken in a single layer on a foil-lined baking sheet. Baste with 2 tablespoons maple mixture. Bake the chicken for 10 minutes. Then turn the chicken over, baste with remaining 2 tablespoons maple mixture and continue to cook until chicken is done. Remove from the oven, sprinkle with sliced spring onions and serve with couscous and orange segments.
