Halloumi cheese salad with aubergine and lemon yoghurt dressing

Ingredients

  • 1 large aubergine
  • 150g halloumi cheese (Fior di Vita)
  • Small bunch kale, stalks removed
  • 1 small pomegranate
  • 12 cherry tomatoes 
  • 1 red onion
  • 1 lemon
  • Small bunch coriander
  • 2 tbsp cashew nuts
  • 150g Greek yoghurt (Kolios)
  • 2 tbsp olive oil
  • 2 tbsp cider vinegar (Kuhne)

Method

Slice and grill the aubergines and halloumi cheese

Chop and saute the onion with the cherry tomatoes cut in half, add the kale leaves and season.

Zest the lemon and squeeze the juice in a bowl add the vinegar chopped coriander, yoghurt and olive oil.

in a small ceramic oven dish layer the aubergines and the halloumi with the sautéed tomatoes and kale in between, finish with the cherry tomatoes and some crushed halloumi on top.

Bake for 10 minutes at 180 deg Celsius then sprinkle with the nuts and pomegranate.
