Grilled Halloumi and greens couscous

Ingredients

250g plain couscous (Tipiak)
1 lemon Zest and juice
500ml Hot vegetable stock (Knorr)
1 bunch Fresh mint and dill
100g cooked Soy/ edame beans (Orogel)
2 Avocados, peeled and sliced
3 spring Onions, thinly sliced
Salt and pepper to taste
1 bunch Fresh asparagus, trimmed
2 packets Halloumi cheese, sliced (Hanini)
1 tbsp Olive oil (Borges)

Method

Start this recipe with the couscous. Place into a large bowl with the lemon juice and zest and season well with salt and pepper. Pour over the hot stock, mix and cover. Allow to sit for 10 minutes. Meanwhile, heat the oil in a pan and grill the asparagus and sliced halloumi (Alternatively you can do this on the BBQ). To put the salad together, add the herbs, edame, avocados and spring onions into the couscous and mix together well. Spoon the couscous salad into a large serving dish and decoratively arrange the grilled asparagus and halloumi cheese on top.
