Orange and pistachio stuffed calamari

Ingredients

  • 4 calamari
  • 2 tbsp. extra virgin olive oil
  • 1 shallot, chopped
  • 2 cloves garlic, chopped
  • 6 prawns
  • Zest or 1 orange and lemon
  • 1 glass white wine
  • 1 tbsp. of each chopped parsley, mint and basil
  • 2 tbsp. chopped pistachios
  • Fresh breadcrumbs
  • 1 tbsp. black olives (Camel)
  • 1 tbsp. capers (Camel)
  • Handful cherry tomatoes, halved
  • 1 cup Vegetable stock

Method

Clean the calamari and chop the tentacles. Heat a large pan with olive oil and quickly sauté the tentacles with the garlic and shallot for 2 minutes. Add in the prawns and zests and cook for a further minute. Splash in 1/2 white wine to evaporate, followed by the herbs and pistachios and bind together with enough fresh breadcrumbs to form a stuffing. Use to fill the calamari and close the ends tightly using cocktail sticks. Heat a pan with a little oil and quickly seal the calamari. Place into an oven dish, along with the cherry tomatoes, olives, capers and remaining wine. Stir in the vegetable stock and place in the oven covered for approximately 10-15 minutes. Serve sprinkled with extra fresh herbs.

Naddaf il-klamari u qatta’ t-tentakli. Saħħan taġen kbir biż-żejt taż-żebbuġa u qalli malajr it-tentakli mat-tewm u l-basla għal 2 minuti. Żid il-gambli kbar u l-qoxra u sajjar għal minuta oħra. Ferrex nofs l-inbid abjad sakemm jevapora, segwit mill-ħxejjex aromatiċi u pistaċċi u għaqqad flimkien bil-frak tal-ħobż frisk biżżejjed biex tifforma l-mili. Uża biex timla l-klamari u għalaq sew it-truf billi tuża stikek tal-cocktail. Saħħan taġen bi ftit żejt u malajr issiġilla l-klamari. Poġġi ġo dixx tal-forn, flimkien mat-tadam ċirasa, iż-żebbuġ, il-kappar u l-inbid li jifdal. Ħawwad u żid miegħu l-istokk tal-ħaxix u poġġi fil-forn mgħotti għal madwar 10-15-il minuta. Servi bi ħwawar friski żejda fil-wiċċ.
