Gluten-free date and peanut butter truffles

Serves: 40

Ingredients

  • 500g dates with no stones
  • 3 tbsp gluten-free peanut butter
  • 1 packet Gluten-free chocolate biscuits (Dr Schar)
  • Gluten-free cocoa powder
  • Petite four cases for serving

Method

Start this recipe by crushing the chocolate biscuits in a food processor and remove. Next, place in the dates and pulse to a paste for 10 seconds. Next, add in the peanut butter and crushed biscuits and pulse again to a soft paste. Remove the mixture and place into a bowl. Roll the mixture into small balls, petite four size. Next, roll the balls into the cocoa powder then place into petite four cases before serving.
