Gluten-free date and nut bites

Ingredients

For the nut shells
  • 150g Toasted walnuts
  • 50g pistachios
  • 50g dates
  • Pinch of salt
For the filling
  • Dates, soaked in hot water
  • Melted gluten free dark chocolate
  • Pecan halves

Method

In a food processor, blend together the toasted walnuts and pistachios to chop into small pieces. Add in the dates and pulse together. Spoon the mixture evenly into greased mini muffin tins and press down gently to create a thin, even crust on the bottom and sides. Place in freezer while making the filling. Place the soaked dates in a food processor, add in 1-2 tbsp hot water and blend until smooth. Spoon or pipe the filling into the prepared shells. Spoon over a little of the melted chocolate and place pecan halves on top. Place in refrigerator and allow tartlets to set up for at least 1 hour before removing from the trays.

  • ġewż Amerikan maqsum min-nofs

Method

Fi processor ħawwad flimkien il-ġewż u l-pistaċċi biex tqatta f’biċċiet żgħar. Żid it-tamal u ħawwad flimkien. Aqsam i t-taħlita indaqs fl-landa tal-mini muffins midluka u agħfas bil-mod biex toħloq qoxra rqiqa, kemm f il-qiegħ kif ukoll fil-ġnub. Poġġi fil-friża waqt li qed tagħmel il-mili. Għall-mili poġġi t-tamal mxarrba fi processor, żid mgħarfa jew tnejn ilma sħun u ħawwad. Ippajpja l-mili fil-qoxra ppreparata. Poġġi fil-wiċċ ftit ċikkulata mdewba u poġġi fuq nofsijiet tal-pecan nuts. Qiegħed fil-friġġ u ħallihom joqgħodu għal mill-inqas siegħa qabel ma tneħħi mit-trejs u isservi.
