Festive turkey meatloaf with mustard gravy

Ingredients

For the turkey loaf

  • 700g left-over cooked turkey, pulled
  • 1 tbsp olive oil (Borges)
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 carrots, finely diced
  • 1 tbsp chopped thyme
  • 2 tbsp chopped parsley
  • Salt and pepper
  • 3 tbsp roughly chopped walnuts
  • 1 cup fresh breadcrumbs
  • 2 eggs
  • 8 slices streaky bacon

For the gravy

  • 1 shallot, finely chopped
  • 2 sprigs fresh thyme
  • 1 tbsp butter (President)
  • 1 heaped tsp whole grain mustard
  • 1 chicken gravy stock pot (Knorr)
  • 100ml cream (Benna)
  • 150ml water

Method

To make the turkey loaf, lay a large piece of foil onto your work top and grease well with butter, lay the bacon slices in a row down the middle, side by side. Next, heat the oil in a pan and sauté together the onion, garlic, carrots and thyme for 5 minutes to soften. Tip into a bowl with the parsley, breadcrumbs, walnuts and pulled turkey and season well with salt and pepper. Crack in the eggs, mix together well then spoon the mixture over the bacon. Squeeze together tightly and roll up in the foil. Bake in the oven at 200`c for 35-40 minutes. Meanwhile, make the gravy by sautéing the shallot in a pan with the butter and thyme sprig for 4 minutes. Add in the whole grain mustard, cream, water and chicken gravy pot and mix together well, whilst heating until the gravy has thickened and is smooth and glossy. Serve the turkey loaf in thick slices with the mustard and thyme gravy on the side.
