Date and orange torte with wanuts

Ingredients

For the pastry

  • 450g plain flour
  • Pinch of salt
  • 225g unsalted butter
  • 2 tbsp sunflower oil
  • 6 tbsp caster sugar
  • Grated zest of 1 orange
  • Grated zest of 1 lemon
  • Few drops vanilla essence
  • Some chilled water to bind

For the filling

  • 500g compressed dates
  • Juice of 6 large oranges
  • Grated zest of an orange
  • 200g shelled walnuts, chopped
  • Icing sugar to decorate
  • walnut halves to decorate

Method

Grease a 26cm round flan tin with butter and dust with flour. Sift the flour and salt into a bowl and add the butter. Rub the butter into the flour until the mixture resembles fine breadcrumbs. Add the oil, mix and add the sugar, lemon rind and vanilla essence. Mix and then add enough cold water to be able to gather the ingredients into a firm dough. Place the pastry on a lightly floured surface and knead for 2 minutes. Wrap in clingfilm and leave to rest for 30 minutes in a cool place. Roll out the pastry on a floured surface to a thickness of 2cms. Line the base and sides the tin with the pastry. Chop up the dates and place them in a saucepan with the orange juice and orange zest. Simmer over a medium heat for around 12 minutes or until the mixture turns into a very thick syrup. Stir occasionally. Take off the heat and mix in the walnuts Leave to cool completely. Spoon the mixture into the pastry case and smooth the top with a wet spatula. Cut the remaining pastry into long strips 3cms wide. Place these strips over the filling to form a neat trellis. Bake in a slightly hot oven for 55 minutes, or until the pastry is lightly browned. Remove from the oven and leave to cool completely. Transfer the torte onto a round serving plate and decorate the top with the walnut halves and icing sugar. Suggested accompanying wine: DELICATA Casella Moscato sweew white wine

  • Qoxra ta’lummijja mahkuka
  • Ftit qtar vanilla
  • Ftit ilma kiesah biex tghaqqad

Ghal-mili

  • 2 pakketti ta’250 gramm tamal tac-cappa
  • Meraq ta’6 laringiet kbar
  • Qoxra ta’laringa mahkuka
  • 200 gramm gewz minghajr qoxra, mqattajn rqaq
  • Ftit icing sugar biex izzejjen
  • nofsijiet tal-gewz biex izzejjen
 

Method

Gharbel it-tqiq u l-melh f’skutella. Zid il-butir, u b’idejk ahdem l-ingredjenti sakemm it-tahlita ‘ssir qisa frak tal-hobz fin. Zid iz-zejt, hawwad, umbaghad zid iz-zokkor, il-qxur tal-frott mahkukin u l-vanilla. Hawwad l-ingredjenti sew fliemkien. Zid bizzejjed ilma kiesah biex tkun tista tghagen l-ingredjenti f’ghagina li m’ghandiex tkun xotta jew ratba ‘zzejjed. Ghagen l-ghagina ghal ftit minuti fuq daqsxejn tqiq umbaghad ghatti l-ghagina u halliha toqghod ghal 30 minuta f’post frisk. Idlek dixx tal-flans ta’26 centimetru bil-butir u ghaddih b’daqsxejn tqiq. Qatta t-tamal u poggihom f’borma zghira mal-meraq u l-qoxra tal-laring. Sajjar fuq nar moderat ghal madwar 12 l-minuta jew sakemm it-tahlita ssir gulepp maghqud. Hawwad spiss. Nizzel minn fuq in-nar u zid il-gewz. Hawwad sew u halli t-tahlita tibred. Iftah l-ghagina fuq daqsxejn tqiq u iksi l-qih u gnub tad-dixx bl-ghagina. Ferragh l-mili u illixxa sew il-wicc. Aqta l-kumplament tal-ghagina fi strippi twal. Irranga din l-ghagina fuq il-mili f’forma ta’kanizzata. Ahmi t-torta go forn moderat ghal ftit jahraq ghal madwar 55 minuta jew sakemm l-ghagina tiehu kulur dehbi. Ohrog it-torta mill-forn u halliha tibred. Poggi t-torta fuq platt tond u zejjen bin-nofsijiet tal-gewz u ftit icing sugar imraxxax.
