Curried pork with cherry tomatoes, apples and flaked almonds

Ingredients

  • 2 tbsp oil
  • 4 cloves garlic, chopped
  • 2 onions, sliced
  • 700g pork, cut into cubes
  • 250g cherry tomatoes
  • 2 apples, cored and sliced
  • 3 tbsp curry paste
  • 2 tsp turmeric
  • 600ml hot water
  • 1 tbsp chopped parsley
  • 30g sliced almonds, toasted
  • 350g cooked basmati rice for serving

Method

In a large frying pan, heat the oil and add the chopped garlic and sliced onions. Soften together for 3 minutes. Add the chopped pork, cherry tomatoes and apple and cook for 2 minutes to seal the meat. Add the curry paste and turmeric, season well with salt and pepper, and cook for one minute to release the curry spices. Add the hot water, stir well, and leave to cook on a low heat for about 15 minutes. (If the sauce becomes too dry during cooking, add a little more water) When ready, the meat should be tender, with a thick creamy curry sauce. Sprinkle with the chopped parsley and sliced toasted almonds just before serving the curry with plain basmati rice.

Majjal bil-kari, tadam ċirasa, tuffieħ u lewż

Ingredients

  • 2 mgħaref żejt
  • 4 sinniet tewm, imqattgħin
  • 2 basliet, imqattgħin roti
  • 700g majjal, imqatta’ f’dadi
  • 250g tadam ċirasa
  • 2 tuffiħiet, mingħajr żerriegħa u mqattgħin
  • 3 mgħaref paste tal-kari
  • 2 kuċċarini turmeric
  • 600ml misħun; mgħarfa tursin, imqatta’
  • 30g lewż inkaljat, imfarrak
  • 350g ross basmati mgħolli minn qabel, biex isservi

Method

F’taġen kbir, saħħan iż-żejt u żid it-tewm imqatta’ u l-basal. Ħallihom jirtabu għal 3 minuti. Imbagħad żid id-dadi tal-majjal, it-tadam ċirasa u t-tuffieħ, u sajjar għal 2 minuti biex tissiġilla l-laħam. Żid il-paste tal-kari u t-turmeric u ħawwar bil-bżar u l-melħ. Sajjar għal minuta biex il-ħwawar jerħu t-togħma tagħhom. Żid il-misħun, ħawwad tajjeb u ħalli l-laħam itektek fuq nar bati għal 15-il minuta. (Jekk iz-zalza tixxotta meta tkun qed issir, żid ftit misħun ieħor). Il-laħam irid ikun tari meta jkun lest u z-zalza tal-kari għandha tkun kremuża u magħquda. Itfa’ t-tursin imqatta’ u l-lewż imfarrak fil-wiċċ qabel ma sservi l-majjal bil-kari mar-ross basmati.
