Crunchy chicken strips with sour cream and chili salsa

Ingredients

For the chicken

  • 2 chicken breasts, cut into fingers (SPA)
  • 3-4 tbsp plain flour, seasoned with salt and pepper
  • 1 bag chili tortilla chips (Santa Maria)
  • 3 eggs (Coccodi)
  • Good drizzle olive oil (Borges)

You will also need

  • 150ml fresh cream
  • 2 limes, cut into wedges
  • 2 tomatoes, deseeded and diced
  • 2 tbsp olive oil
  • 1 chili, finely chopped
  • 1  clove garlic, crushed
  • ½ red onion, finely chopped

Method

To make the chicken strips, crush ½ of the tortillas and place into a bowl. In another bowl beat 3 eggs. Finally in a third bowl place the seasoned flour. Dip the chicken strips into the flour, then the egg, then into the crushed tortillas. Repeat the process again to double coat. Place the strips onto a baking sheet, drizzle with a little olive oil and bake in the oven at 200`c for 12-15 minutes (alternatively you can fry) Meanwhile, make the sour cream by mixing together the fresh cream and the juice of ½ lime. Stir and place in the fridge. Next, make the salsa by mixing together the tomatoes, chili, onion, garlic, olive oil and juice of ½ lime. To serve, place the salsa and sour cream into small bowls and serve the crunchy chicken strips on the side.
