Creamy cinnamon and apple quinoa bowls

Ingredients

For the quinoa

  • 70g quinoa, rinsed (Tipiak)
  • 100ml water
  • 100ml single cream (Elmlea)
  • 1 tbsp sugar
  • 1 tsp cinnamon powder

You will also need 

  • 1 apples, peeled, cored and diced
  • 1 knob butter (Lakeland)
  • 2 tsp sugar
  • 2 tbsp chopped toasted walnuts
  • Good pinch cinnamon
  • Good drizzle honey
  • 2 scoops vanilla ice-cream for serving (Carte d’or)

Method

Start by making the quinoa. Place all the ingredients into a saucepan and heat together for 10 minutes. Meanwhile, cook the diced apples in a pan with the butter and sugar to caramelize then add in a pinch of cinnamon. To serve, spoon the cinnamon quinoa into bowls and add on a scoop of vanilla ice-cream. Spoon over the cooked apples, drizzle with honey and sprinkle over the chopped toasted walnuts.
