Couscous pizza base with Mediterranean toppings

Ingredients
- 1 sachet couscous (Tipiak)
- 125g Butter (Valio)
- 1 teaspoon dried oregano
- 40g flour (Lamb brand)
- 1 ½ teaspoon bicarbonate of soda
- 50g grated Parmesan cheese
- 4 eggs (Le Naturelle)
- Tomato pizza sauce
- 2 white Gbejna
- 6 black olives
- 5 slices Parma ham
- 2 Fresh figs (or few dry)
- Few cherry tomatoes
- Basil leaves
- Rucola
- Extra virgin olive oil

Method
Start by melting the butter in a sauce pan, stir in the flour, gradually pour in 600ml of water. Bring mixture to the boil, remove from heat. Stir in couscous, oregano, bicarbonate of soda and Parmesan cheese. Cover and allow the couscous to absorb for approx. 5 minutes. Beat in the eggs
Pour the mixture onto a baking tray lined with baking parchment.
Spread with the pizza sauce, top up with gbejna slices. Prick pastry with fork and bake for 10 minutes in a pre-heated oven at 200°C.
Remove from heat and finish decorating with the remaining ingredients
