Coq au vin with prunes

Ingredients
- 6 chicken thighs or 1 small chicken cut into pieces
- 3 tbsp well seasoned plain flour
- 25g butter
- 1 tbsp olive oil
- 10 shallots, peeled
- 150g streaky bacon, sliced
- Few sprigs thyme
- 2 tbsp balsamic vinegar
- 350g button mushrooms
- 400ml red wine
- 400ml chicken stock
- Fresh seasoning
- 200g prunes
- 2 tbsp chopped parsley
Method
Start by coating the chicken pieces in the seasoned flour, making sure that they are completely covered. Heat the butter and olive oil in a large pan, and then brown the chicken pieces on all sides for a few minutes. Remove them from the pan, and put to aside. In the same pan, and add the shallots and bacon and cook them for about 4 minutes, releasing all their juices. Put the browned chicken pieces back into the pan, and then add the thyme sprigs, balsamic vinegar, button mushrooms, red wine, chicken stock and season well with pepper and salt. Bring to the boil, and then simmer on a low heat for about 30 minutes, to slowly cook the chicken. After 30 minutes, add the prunes to the pan and cook for a further 10 minutes. Check that the chicken pieces are cooked through. If not, cook the coq au vin for another 10 minutes. When ready to serve, add the chopped parsley to the coq au vin with prunes and serve with warm crusty bread.

- 3 mgħaref dqiq plain, imħawwar

- mgħarfa żejt taż-żebbuġa
- 10 basliet żgħar , imqaxxrin
- 150g biċċiet bacon taż-żaqq (streaky)
- ftit biċċiet sagħtar
- 2 mgħaref ħall balsamiku
- 350g faqqiegħ żgħir
- 400ml nbid aħmar
- 400ml stokk tat-tiġieġ
- ħwawar friski
- 200g pruna
- 2 mgħaref tursin, imqatta’
Method
Iksi l-biċċiet tat-tiġieġ bid-dqiq minn kull naħa. Saħħan il-butir u ż-żejt taż-żebbuġa f’taġen kbir u sajjar t-tiġieġ għal ftit minuti min-naħat kollha sakemm jiħmaru. Neħħihom mit-taġen u warrabhom f’ġenb. Fl-istess taġen, żid il-basal u l-bacon u sajjarhom għal madwar 4 minuti biex jerħu l-meraq tagħhom. Erġa’ itfa’ l-biċċiet tat-tiġieġ, żid is-sagħtar, il-ħall balsamiku, il-faqqiegħ, l-inbid aħmar u l-istokk tat-tiġieġ u ħawwar bil-bżar u l-melħ. Ħallih jiftaħ jagħli, imbagħad baxxi n-nar u ħalli t-tiġieġ itektek għal madwar 30 minuta. Żid il-pruna u kompli sajjar għal 10 minuti. Ara li l-biċċiet tat-tiġieġ ikunu saru tajjeb. Jekk le, sajjarhom għal 10 minuti oħra. Meta jkunu lesti, itfa’ t-tursin u servi t-tiġieġ mal-ħobż sħun.
