Cold Coronation chicken salad

Ingredients
- 2 chicken breasts, roasted
- 150g cooked pasta
- 1 mango, peeled and cut into cubes
- 1 red pepper, deseeded and cut into cubes
- 2 tbsp smooth mango chutney
- 1 heaped tbsp curry powder
- 2 tbsp olive oil
- 200ml natural yogurt
- 2 tbsp chopped coriander leaves
- 10 whole mint leaves
- 2 tbsp toasted flaked almonds
- 6 dried apricots, sliced
- Small salad leaves to decorate
Method
Start this recipe by chopping the cooked chicken breasts into bite sized pieces. Place into a large bowl and stir in the chopped mango and pepper. In another bowl make the dressing by mixing together the chutney, yogurt, curry powder, olive oil and chopped coriander. Pout this dressing over the chicken mixture and mix well. Stir in the cooked pasta and serve into long pasta dishes. Toss over the toasted almonds, apricots and mint leaves and serve decorated with a few small salad leaves.
