Citrus polenta cake with Greek yogurt and pistachios

Ingredients
For the cake
- 250g unsalted butter
- 250g caster sugar (Lamb Brand)
- 50g pistachios, roughly chopped
- 200g polenta (Lamb Brand)
- 150g pure ground almonds
- 1 tsp baking powder (gluten-free)
- 250g Greek yogurt
- 3 eggs
- Zest and juice of an orange
- Zest of 2 lemons
To decorate
- 250g Greek yogurt
- 50g toasted pistachios, roughly chopped (Lamb Brand)
- Zest of an orange
Method
Line a 20cm spring bottomed tin with baking paper and put aside. Start by beating together the butter and sugar till light. Mix in the 100g pistachios, polenta, ground almonds and baking powder. Next, mix in the eggs one at a time, followed by the 250g Greek yogurt, citrus juice and zest. Spoon into the prepared baking tin, level out and bake in a hot oven at 200`c for approximately 50 minutes. Remove from the oven and allow to cool down completely. To serve, spread over the remaining Greek yogurt and toss over the pistachios and orange zest.

- Il-qoxra maħkuka ta’ 2 lumijiet
- 250g jogurt Grieg
- 50g pistaċċi inkaljat imqatta’ (Lamb Brand)
- Il-qoxra maħkuka ta’ larinġa
Method
Iksi landa ta’ 20ċm bil-qiegħ jinqala’ bil-karta forn u warrabha f’ġenb. Ibda billi tħabbat flimkien il-butir u z-zokkor sakemm ikollok taħlita ħafifa. Żid il-50g pistaċċi, il-polenta, il-lewż mitħun u t-trab tal-ħami. Imbagħad żid il-bajd waħda waħda u ħawwad. Żid 250g jogurt, il-meraq tal-larinġa u l-qxur maħkuk. Itfa’ t-taħlita fil-landa, illixxaha u aħmi l-kejk f’forn mikwi, f’temperatura ta’ 200oC għal madwar 50 minuta. Oħorġu u ħallih jiksaħ sew. Biex isservi, idlek il-jogurt Grieg li jkun fadal u ferrex il-frak tal-pistaċċi u l-qoxra maħkuka tal-larinġa.
