Christmas turkey bragjoli
Ingredients
For the bragjoli
- 1 turkey breast
- 8 bacon streaky slices
- 200g minced pork or chicken
- 200g pork sausage meat
- Grated lemon zest
- 2 cloves chopped garlic
- 1 grated ġbejna
- 2 tbsp grated Parmesan
- Fresh sage and parsley
- Chopped nuts
- Dried cranberries
- Fresh seasoning
For the sauce
- 1 can tomato passata (Star)
- 1 chopped onion
- 1 cup red wine
Method
Slice the turkey into 8 thin slices. Mix the minced pork or chicken in with the pork sausage meat, the garlic, cheeses, sage, parsley, nuts and cranberries. Season well. Divide the filling between the turkey and roll into bragjoli. Wrap tightly with the bacon slices. Drizzle lightly with the olive oil and sea in a hot oven for 10 minutes. To prepare the sauce, cook the chopped onion in a spoon of olive oil, add the wine and tomato passata. Put the turkey bragjoli in the sauce and simmer gently for 30 minutes.
