Christmas herbed sausage roll with port cranberry sauce

Ingredients

  • 2 jars cranberry sauce (Colman’s)
  • Zest 1 orange
  • 1 shot port
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 1 tbsp. olive oil (Olitalia)
  • 2 tbsp. chopped fresh rosemary, sage and thyme
  • 500g sausages, casings removed (British sausage company SPA)
  • 500g turkey mince
  • 50g dried cranberries
  • 50g pistachios (Lamb brand)
  • 50g walnuts, chopped (Lamb brand)
  • 50g dried breadcrumbs (Tipiak)
  • 3 eggs, beaten (Le Naturelle)
  • 1 x 500g block puff pastry

Method

Start this recipe by placing the cranberry jam, orange zest and port into a saucepan and boil gently for 3 minutes. Remove off the heat and allow to cool down. Fry the onion and garlic in a pan with 1 tsp olive oil and the fresh chopped herbs. Transfer into a large bowl with the sausage filling, minced turkey, cranberries and nuts, breadcrumbs and 2 of the beaten eggs. Mix together well. Roll out the pastry on a floured surface into a large rectangle. Cut off a piece to use later. Brush the pastry with the cranberry sauce and spoon the sausage filling down the middle. Wrap tightly in the pastry and turn the seal to the bottom. Cut off any excess pastry. Cut the reserved pastry into stars. Brush the roll with the remaining beaten egg and stick the pastry stars all over. Brush the stars with the remaining egg and place onto a baking tray lined with non stick paper. Bake in the oven at 200°C for 40-45 minutes or until golden brown. Serve warm cut into slices with the cranberry jam on the side.
