Christmas ginger brownies with cinnamon frosting

Ingredients

For the brownies
210g plain flour
1 tsp baking powder
2 tsp ground ginger
1 tsp cinnamon
Pinch nutmeg and cardamom
Pinch salt
Zest 1 lemon
120g unsalted butter, melted (Lakeland)
220g light brown sugar
50g white sugar
2 eggs (Coccodi)
1 tsp vanilla extract
2 tbsp treacle
You will also need
100g cream cheese (Emborg)
200g icing sugar
½ tsp cinnamon
3 tbsp white chocolate chips
1 tbsp coloured festive sprinkles

Method

Line a 20cm square cake tin with baking paper and put aside. Mix together the flour, baking powder, spices and salt and put aside. Next, beat together the melted butter, sugars and treacle. Mix in the eggs one by one along with the vanilla and lemon zest. Finally, mix in the flour mixture until just combined. DO NOT over mix. Spoon into the prepared tin, even out and bake in the oven at 200`c for 30-35 minutes. Cool down completely before glazing with glaze icing, white chocolate chips and festive sprinkles
