Christmas bread and butter pudding

Serves: 8

Ingredients

  • 6 soft rolls
  • Butter for spreading
  • 300ml milk
  • 300ml cream
  • 3 whole eggs + 1 yolk
  • 100g sugar
  • Handful fresh cranberries
  • 100g mince meat
  • 1 apple
  • 2 tots of whisky

Method

Slice the bread rolls into 1 cm thick slices and spread with the butter. Warm up the milk & cream to just below simmering point. Whisk the eggs & yolk, together with the sugar and whiskey until creamy. Pour over the hot liquid, pass through a strainer and keep warm. Grease and oven dish with more butter, Peel, slice and chop the apple and put in the bottom of the dish together with the mince-meat & cranberries. Cover with the buttered bread, pour over the hot custard and press gently so that the bread absorbs the liquid. Put the baking dish in a bain-marie hot and bake in a hot oven 175°c for 30 minutes.
