Chicken and coconut mozzarella balls with figs

Ingredients

  • 8 mozzarella pearls (Fior di Vita)
  • 400g chicken mince
  • 50g desiccated coconut (Lamb brand)
  • 1 tsp lemon pepper
  • 1 tbsp. chopped parsley
  • 50g dried breadcrumbs
  • 8 thin pancetta slices or speck
  • 8 fancy sticks
  • 2 fresh small figs
  • 1 bunch baby spinach leaves
  • 3 cloves garlic

Method

In a medium bowl, mix together the chicken mince, lemon pepper, parsley, breadcrumbs, coconut and season well with salt and pepper. Form the mixture into balls with the mozzarella pearls stuffed in the middle, then roll with the pancetta or speck. Heat a pan and brown the pancetta all over then place into the oven for a few minutes to finish off cooking. Meanwhile, cut the figs in quarters and seal from both sides. Use a fancy kebab stick to insert the chicken and fig on each. Sauté the spinach in garlic and olive oil season and serve the coconut and mozzarella chicken balls on top.
