Gluten-free savoury spinach and cheese brownies

Ingredients
1 tbsp Olive oil
3 Cloves garlic, sliced
4 Spring onions, trimmed and sliced
1 Bag fresh baby spinach leaves
2 tbsp Chopped fresh basil
120g Gluten-free flour (Schar)
1 tsp Salt
2 tsp Baking powder
240g Milk
3 eggs, Lightly beaten (Coccodi)
30g Melted butter (Lakeland )
100g Greek cheese (Emborg)
100g Shredded mozzarella (Emborg)
50g Grated Parmesan (Zanetti)
Method
Heat the oil in a pan and saute together the spring onions and garlic for 4 minutes. Add in the spinach to wilt. If any water is released, remove it from the pan. In a large bowl mix together the flour and baking powder. Add in the eggs, milk and melted butter and whisk together. Add in the cooked spinach mixture, chopped basil, crumbled Greek cheese and mozzarella (DO NOT OVER MIX).Transfer to a buttered rectangular oven dish, sprinkle over the Parmesan cheese and bake at 180`c for 40-45 minutes. Allow to cool down for 10 minutes before serving cut into squares.
