Caramelised onion and thyme sausage rolls

Ingredients

2 large onions, thinly sliced
1 tbsp butter
1 sprig fresh thyme
Salt and pepper to taste
2 tbsp brown sugar
1 tbsp balsamic vinegar
1 packet pork and apple sausages (Spa)
1 egg, beaten
400g puff pastry
2 tbsp sesame seeds

Method

Start by making the caramelized onions. Fry the onions with the butter, thyme, salt and pepper for 5 minutes. Add in the sugar and balsamic and cook down slowly for 10-15 minutes. When ready, place into a large bowl. Remove the sausage casings and discard, then mix the sausage meat with the onions. Next, roll out your puff pastry and cut into strips. Brush lightly all over with beaten egg. Roll out the filling, and place on one side of the pastry and fold over the extra pastry. Press together well and use a fork to punch holes in the top. cut into mini sausage rolls or cut into larger pieces. Place onto a lined baking sheet, brush the tops with beaten egg and sprinkle over the sesame seeds. Bake for 20-25 minutes at 200`c till golden and crispy. Serve either hot or cold.
