Sticky ginger sesame chicken with basmati rice

Ingredients
For the sticky glaze
1 tbsp honey
Juice ½ orange
2 tbsp dark soy sauce
1 tsp sesame oil
1 tsp rice vinegar
3 tbsp water
1 piece ginger, finely grated
1 clove garlic, finely grated
Good pinch chilli flakes (Lamb brand)
1 tsp corn flour (Lamb brand)
You will also need
2 chicken breasts, cut into chunks
2 spring onions, sliced
Salt and pepper
Oil for frying (Borges)
1 tbsp toasted sesame seeds (Lamb brand)
2 cups cooked Basmati rice (Lamb brand)
Extra chilli, orange zest and lime wedges to decorate
Method
Season the chicken with salt and pepper and quickly brown in a large pan or wok with some oil and the sliced spring onions. Meanwhile, mix together all the ingredients for the sticky sauce. Just before the chicken is cooked through, add in the sticky sauce and toss around to coat completely. Continue to cook for 2 minutes or until the glaze is thick and glossy. Throw in the sesame seeds and serve the chicken into 2 bowls with the cooked sticky rice. Garnish with extra chilli flakes, orange zest and lime wedges and serve.
