Cajun spiced seafood salad with citrus

Ingredients

  • 200g fresh mussels
  • 5 peeled prawns
  • 3 octopus tentacles, cooked
  • 1 squid
  • 1 lime 
  • Juice of 1 orange
  • Juice of half a lemon
  • Fresh coriander
  • 2 cloves of garlic
  • 1 Cajun spice roasting bag (Maggi)
  • 1 Packet of baby salad leaves
  • 1 grape fruit segmented
  • 1 orange segmented
  • 1 avocado
  • 1 onion
  • 1 tomato
  • Extra virgin olive oil
  • Dried oregano
  • Freshly ground black pepper

Method

Put all the seafood in a mixing bowl, mix with the lime, orange, lemon juice and coriander. Place the seafood mixture in a Cajun roasting bag and cook in a hot oven for approx. 12 minutes.

Toss together in a salad bowl the salad leaves, fruit segments, tomato slices, avocado wedges, sliced onion, oregano and cracked pepper. 

Serve the salad accompanied with the seafood mix, dress with the obtained juices
