Breaded pekorin cheese zucchini fries with tomato salsa

Ingredients

  • 2 medium sized green zucchini
  • 200g panko breadcrumbs 
  • 80g Pekorin cheese, grated (Hanini)
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to season
  • 2 eggs, beaten (Le Naturelle)
  • 4 tbsp flour (Lamb brand)
  • vegetable oil for frying
  • 1 tub ready-made chunky salsa for serving 

Method

This is a very easy recipe to prepare and perfect as a snack or starter. Trim the ends off the zucchini and cut into chunky fries. In a deep bowl mix together the breadcrumbs, grated Pekorin cheese, parsley and season with salt and pepper. Place the beaten eggs into another bowl and the flour into another. Coat the zucchini fries in  the flour, followed by the beaten egg, then finally coat in the cheesy breadcrumb mixture. Heat the vegetable oil and fry the zucchini in batches till lightly golden. Allow to sit on kitchen paper to drain then serve immediately onto plates with the dipping salsa on the side.
