Beef and halloumi cheese parcel with black olives and coriander
Serves: 4
Ingredients
- 1 tbsp olive oil (Borges)
- 1 onion, chopped
- 2 cloves garlic, chopped
- 500g beef mince
- 1 tsp ground cumin
- ½ tsp ground coriander
- 1 tbsp tomato puree
- 1/2 beef stock pot (Knorr)
- Fresh seasoning
- 200g halloumi cheese, chopped
- 3 tbsp chopped kalamata olives
- 1 tbsp chopped fresh coriander
- Rolled puff pastry
- 1 beaten egg and sesame seeds to decorate
Method
Start this recipe by heating the oil in a large pan and sauté the onion and garlic for 3 minutes. Add in the beef mince and brown for a minute. Add in the spices, tomato puree beef stock pot and season well with salt and pepper. Continue to cook the mince mixture for another 8-10 minutes. Allow to cool down completely before mixing in the halloumi cheese cubes, chopped olives and chopped coriander. Next, lay the rolled puff pastry onto your work top and cut off 1/3. Brush the edges of the smaller piece of pastry with beaten egg and place the filling down the middle. Use the remaining pastry to cover the top. Press the edges together and trim off any excess pastry. Use a sharp knife to cut slits into the top layer of pastry. Brush with more beaten egg and sprinkle over sesame seeds. Place onto a baking tray and bake in the oven at 200`c for approximately 35-40 minutes, or until golden brown and cooked through. Remove from the oven and allow to cool down for 5 minutes before serving cut into thick slices.
