Baked rice with eggs and bacon

Serves:

Ingredients

  • 100g rice
  • 2 eggs
  • 3 rashes bacon, chopped
  • 50g grated cheese
  • 100ml polpa
  • 100ml vegetable stock
  • 1 onion, chopped
  • 1 clove garlic, chopped

Method

In a thick bottom pan, sauté the chopped onion and garlic for 3 minutes then add in the bacon and cook for another 3 minutes. Gradually pour the vegetable stock and polpa and allow to simmer for 10minutes. In a separate pan, boil the rice for 10 minutes , drain and mix with the sauce. Mix in the eggs and cheese and bake in the oven for 15 minutes.
