Aunt Gola`s Maltese baked rice

Ingredients
For the sauce
- 2 tbsp vegetable oil
- 2 cloves garlic, chopped
- 1 onion, chopped
- 200g tomato puree (ROSITA)
- 400g minced pork
- 2 tsp curry powder
- 1 chicken stock cube (KNORR)
- 200ml water
- Fresh seasoning
You will also need
- 320g long grain rice
- 1 litre water
- 3 eggs, beaten
- 100g grated Parmesan cheese
Method
Maltese baked rice is another easy recipe to prepare. Start by preparing he sauce. Heat the oil in a pan and soften together the garlic and onion for 4 minutes. Add in the tomato puree, minced pork and curry powder and cook for a few more minutes, or until the mince is browned. Finally, add the water, chicken stock cube and season well with salt and pepper. Allow the sauce to cook for a further 5 minutes. When ready, pour the sauce into a large deep oven proof dish. Add in the long grain rice, beaten eggs and the grated Parmesan cheese and mix together well with a large fork. Finally, pour in the water and mix once again. Place the dish into the oven at a temperature of 200`c. The baked rice should take 30-40 minutes to cook through. It is important to remove the baked rice from the oven while to rice still has some liquid in the dish, as it will continue to absorb this as it is cooling down.
