Apple and walnut layer cake

Ingredients
For the cake
- 225g unsalted butter
- 280g caster sugar (Lamb Brand)
- 4 eggs
- 2 tbsp vanilla essence
- 350g self-raising flour (Lamb Brand)
- 2 tsp baking powder (Lamb Brand)
- 700g apples
- Juice of half a lemon
- 1 ½ tsp ground cinnamon
- 4 tbsp Christmas mincemeat
- 2 tbsp Demerara sugar
- 50g walnuts, coarsely chopped (Lamb Brand)
For serving
- 100g icing sugar (Lamb Brand)
- 1 tsp ground cinnamon
- Vanilla ice-cream
Method
Heat the oven to 180`c and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper. Peel, core and thinly slice the apples then squeeze the lemon juice over. Set to one side. Place the butter, caster sugar, eggs, vanilla, flour and baking powder into a large bowl and mix well until smooth. When ready, finally stir in the chopped walnuts. Spread 1/3 the mixture into the prepared tin. Arrange ½ of the apples over the top of the mixture followed by ½ of the cinnamon and the Christmas mincemeat. Carefully spread over 1/3 of the cake mixture followed by the remaining apple slices. Sprinkle over the remaining cinnamon. Finally, cover with the remaining cake mixture and sprinkle over the demerara sugar. Bake in the oven for 45-50 minutes until golden and springy to the touch. Meanwhile, mix together the icing sugar and 1 tsp cinnamon with a little warm water to make a glace` icing and as soon as the cake comes out of the oven drizzle it all over. Serve the apple cake with a scoop of vanilla ice-cream.
