Meat free burgers with smashed avocado

Ingredients

For the burgers
1 x 300g Bag mince (Quorn)
400g Tin kidney beans, rinsed
1 tsp Garlic granules (Lamb brand)
1 heaped tbsp. Smoked paprika
1 tsp Thyme
1 Small onion, finely diced
1 tbsp Chopped parsley
Salt and pepper to taste
You will also need
Olive oil for frying (Borges)
1 large Tomato, sliced
2 tbsp Vegan garlic mayonnaise (Hellmanns)
Fresh salad leaves
1 ripe avocado
Drizzle chilli oil
Salt and pepper to taste
2 vegan burger buns
Chunky fries for serving

Method

This is a very easy recipe. Place the kidney beans into a bowl and mash to a pulp. Mix in the mince and all the remaining ingredients. Form into patties and grill or fry for 10 minutes. Meanwhile smash together the avocado, olive oil and season with salt and pepper. Next, when the burgers are cooked, split the buns and lightly toast. Spoon over the guacamole, tomato, burgers, salad leaves and a blob of mayo. Place on the bun tops and serve with chunky fries and extra mayo on the side.
