Creamy cinnamon and apple quinoa bowls

Ingredients
For the quinoa
- 70g quinoa, rinsed (Tipiak)
- 100ml water
- 100ml single cream (Elmlea)
- 1 tbsp sugar
- 1 tsp cinnamon powder
You will also need
- 1 apples, peeled, cored and diced
- 1 knob butter (Lakeland)
- 2 tsp sugar
- 2 tbsp chopped toasted walnuts
- Good pinch cinnamon
- Good drizzle honey
- 2 scoops vanilla ice-cream for serving (Carte d’or)
Method
Start by making the quinoa. Place all the ingredients into a saucepan and heat together for 10 minutes. Meanwhile, cook the diced apples in a pan with the butter and sugar to caramelize then add in a pinch of cinnamon. To serve, spoon the cinnamon quinoa into bowls and add on a scoop of vanilla ice-cream. Spoon over the cooked apples, drizzle with honey and sprinkle over the chopped toasted walnuts.
