Baked spinach and Greek cheese pastry puffs

Ingredients

  • 300g rolled puff pastry
  • 200g block Greek cheese (Emborg)
  • 200g cream cheese (Emborg)
  • 4 eggs (Coccodi)
  • 200g frozen spinach, defrosted, squeezed and chopped (Emborg)
  • 2 tbsp pine nuts

Method

For this recipe you will need a 12 hole muffin pan. Grease well with butter or oil, cut the rolled puff pastry into squares and use to line the muffin holes. In a bowl, beat the eggs with the cream cheese. Add in the spinach, crumble in ¾ of the Greek cheese and season well with salt and pepper. Spoon the mixture into the pastry cups, crumble the remaining cheese on top and sprinkle with the pine nuts. Bake in the oven at 200c for 20-25 minutes or until cooked through and light and puffy.
